Although today it is not that important as it used to be years ago, there was a time when quicklime was essential to the building industry. The quicklime production depends on the raw material, called caliche (sedimentary deposits of Calcium carbonate), which once heated up it breaks down into quicklime. The importance of quicklime and the amount of lime pits existing in the areas at the south of the Biosphere Reserve made the ‘quicklime pits' proliferate, being specifically designed for this process. Some of them remain as a sample of a not so distant past.
